How to Cook Boerewors
Perfectly cooked boerewors is done when the casing (skin) has not broken during cooking.
Carefully place your boerewors in a braai grid and cook it at a 45‑degree angle over a coal fire, allowing the meat to cook slowly. You should see bubbles of juice under the skin without the skin breaking.
How to Keep Biltong
Keep biltong in an open paper bag or bowl, and allow it to continue curing. It must be kept dry at room temperature.
You can freeze biltong for up to a year if you want to keep it for longer.
Do not reseal the bag and store it in the fridge – it needs to continue drying as you enjoy it. Consume within 3 days… if you can resist eating it all before then!
